Pineapple & Cucumber Salad

A zesty side salad that can be thrown together in less than 10 minutes but is still bound to impress. The perfect punch of lime is balanced with the sweetness of pineapple and fresh tastes of mint and cucumber.

Pineapple & Cucumber Salad

Ingredients

  • 1 cup pineapple
  • 1 ½ Lebanese cucumber
  • 4 radishes
  • 1 handful mint
  • 1 handful chives
  • 1 lime, zest & juice

Method

  1. Cut pineapple and cucumber into chunks. Thinly slice the radish. Add pineapple, cucumber and radish to a bowl.
  2. Finely chop the mint and chives and add to the bowl.
  3. Add the zest and juice of the lime. Use a spoon to mix all the ingredients together.
  4. Divide into four and add to a plate or small bowl to serve.

This easy side salad is the ideal accompaniment to any summer feast. Pair it with some spiced chicken wings and enjoy with friends and family for a delicious meal. The use of lime and mint ensure that this side salad is bursting full of flavour even though its low FODMAP keeping it nice and friendly on your stomach.
