Lime & Coconut Cheesecake Cups

The combination of lime and coconut create the perfect sweet dish to enjoy in the summertime. These cheesecake cups are light, refreshing and deliciously satisfying with a little extra crumble on top.

Ingredients

Crumb Base & Topping
  • 1 cup plain arrowroot biscuits
  • 1 ½ tbsp desiccated coconut
  • 2 tbsp melted butter
Cheesecake Filling
  • 250g lactose free cream cheese softened
  • ⅓ cup caster sugar
  • 1 lime, zest & juice
  • 1 tsp vanilla bean paste
  • 1 cup lactose free heavy cream

Method

  1. Pulse arrowroot biscuits & shredded coconut in a food processor until finely ground.
  2. In a medium bowl, combine the arrowroot and coconut crumbs with melted butter. The mixture should resemble wet sand. Set aside two tablespoons of the crumbs.
  3. Divide the remaining crumb mixture into four cups and push down firmly. Set aside
  4. In a large bowl, combine cream cheese and sugar. Use a hand or stand mixer to beat the cream cheese.
  5. Mix in lime zest, juice and vanilla bean paste. Set aside for five minutes for the sugar to dissolve.
  6. In another bowl, whisk heavy cream until soft peaks form. Use a rubber spatula to gently fold the whipped cream into the cream cheese mixture.
  7. Use a piping bag or spoon to evenly fill the mixture into each cup.
  8. Place in the fridge for at least an hour. Top with extra crumb mixture and lime zest to serve.

One of the most crucial ingredients in cheesecake is of course cream cheese. However, products high in lactose are not suitable on the low FODMAP diet.
