Mint & Berry Yoghurt Parfait
Low FODMAP, quick to assemble and you can change it up depending on what low FODMAP fruit, nuts and seeds you wish to add. This yoghurt parfait is an absolute favourite in our house for breakfast!

An easy and refreshing breakfast or afternoon snack, this mint & berry yoghurt parfait is minimal effort but deliciously satisfying. The mint and lemon add the perfect level of brightness to this summery dish.
Ingredients
- 280g lactose free plain or vanilla yoghurt
- ⅔ cup rolled oats
- 20 almonds chopped
- 2 tbsp pepitas
- ½ cup strawberries
- 1 tbsp blueberries
- 1 tsp caster sugar
- 1 tbsp lemon juice
- mint leaves
Method
- In a bowl combine blueberries, sugar and lemon juice. Set aside for 10 minutes.
- In a separate small bowl mix together oats, almonds and pepitas.
- In a glass layer the parfait with a quarter of the yoghurt followed by a quarter of the oat mix and a quarter of the berry mixture.
- Repeat the layers and top with fresh mint to serve. Repeat this step in another glass.
