Polenta Fries
Change up your regular potato fries side with these polenta fries. Perfectly crunchy, a little bit cheesy and 100% addictive, these polenta fries make a great snack.

Crispy, crunchy and cheesy goodness - these polenta fries will have you coming back for more and more. Dip with your favourite sauce, bake them for a party or just as a side, you can’t go wrong.
Ingredients
- 1 cup instant polenta
- 3 ⅓ cups vegetable stock
- 50g butter
- ⅓ cup parmesan
- 2 sprigs rosemary, finely chopped
- pinch of salt
- olive oil spray
Method
- Line a tray with baking paper and set aside.
- Add the vegetable stock to a saucepan on medium high heat and bring to the boil.
- Once boiling, turn the heat down to low and slowly stir through the polenta.
- Add in butter, parmesan, rosemary and salt. Stir through for two minutes until butter and parmesan are melted.
- Take off the heat and place the the polenta onto the tray. Ensure it is thick and evenly spread out. Place in the fridge to cool for at least 2 hours (or overnight).
- Preheat an oven to 220°C.
- Slice the polenta into desired chip size. Spray generously with olive oil.
- Place in the oven and bake for 30 minutes or until golden.
- Serve with an extra sprinkling of parmesan, rosemary and salt.
