Polenta Fries

Rosemary & Parmesan Polenta Fries

Crispy, crunchy and cheesy goodness - these polenta fries will have you coming back for more and more. Dip with your favourite sauce, bake them for a party or just as a side, you can’t go wrong.

Ingredients

  • 1 cup instant polenta
  • 3 ⅓ cups vegetable stock
  • 50g butter
  • ⅓ cup parmesan
  • 2 sprigs rosemary, finely chopped
  • pinch of salt
  • olive oil spray

Method

  1. Line a tray with baking paper and set aside.
  2. Add the vegetable stock to a saucepan on medium high heat and bring to the boil.
  3. Once boiling, turn the heat down to low and slowly stir through the polenta.
  4. Add in butter, parmesan, rosemary and salt. Stir through for two minutes until butter and parmesan are melted.
  5. Take off the heat and place the the polenta onto the tray. Ensure it is thick and evenly spread out. Place in the fridge to cool for at least 2 hours (or overnight).
  6. Preheat an oven to 220°C.
  7. Slice the polenta into desired chip size. Spray generously with olive oil.
  8. Place in the oven and bake for 30 minutes or until golden.
  9. Serve with an extra sprinkling of parmesan, rosemary and salt.
