Crispy, buttery and herby goodness on roasted potatoes. A perfectly simple side dish that pairs well for any occasion and main. Change it up by using a range of different herbs.

Ingredients

  • 1 kg roasting potatoes
  • 3 tbsp extra virgin olive oil
  • 2 tbsp butter
  • ¼ cup parsley
  • 1 small handful chives
  • 1 small handful of dill
  • salt and pepper to taste

Method

  1. Preheat an oven to 180°C. Add olive oil into to large baking dishes and place in the oven.
  2. Chop the potatoes into bite size pieces. Add the potatoes to a pot and fill with water. Bring to boil.
  3. While potatoes are cooking, chop the herbs and set aside.
  4. Once the water is boiling, drain the potatoes. Allow to cool for five minutes.
  5. Very carefully add the potatoes slowly to the baking dishes. Be mindful of the hot oil. Mix the potatoes around to ensure they are well coated.
  6. Bake for 35 minutes or until golden brown, tossing the potatoes about halfway through.
  7. About 10 minutes before the potatoes are finished, add in the butter and mix through the potatoes to ensure they are evenly coated.
  8. Once the potatoes are cooked, mix through the herbs and season with salt and pepper before serving.
