Tomato, Basil & Mozzarella Pasta

Coming together in under 20 minutes, this tomato, basil and mozzarella pasta is the ultimate comfort meal. The perfect low FODMAP meal for mid week and when you only have minimal ingredients.

Ingredients

  • 1 tbsp garlic infused olive oil
  • 400 grams diced tomatoes
  • ¼ red wine
  • 1 handful basil finely chopped
  • 4 servings low FODMAP gluten free pasta
  • 1 cup mozzarella

Method

  1. In a small pot on medium heat, add olive oil.
  2. Once heated, add in tomatoes, red wine and basil. Increase the heat and bring to a light simmer for 10 minutes until slightly reduced.
  3. While the sauce is simmering, cook pasta as per packet instructions.
  4. Use a stick mixer to blend the sauce to your desired consistency.
  5. Drain the pasta and add in the sauce, coating the pasta generously.
  6. Place the pasta in four bowls. Top with freshly pulled apart mozzarella, extra basil and a drizzle of olive oil. Enjoy!

Although this recipe uses very few and simple ingredients, rest assured it is full of flavour thanks to the fresh basil, red wine and garlic infused olive oil. As garlic is high in fructans, it’s not suitable for the low FODMAP diet however, garlic infused olive oil is a fantastic alternative to still provide that beautiful flavour.
