Smoked Bacon & Cheese Croquettes

Smokey bacon with mashed potatoes and melted cheese, what could be better? These croquettes are perfect for a gathering with friends or as the perfect snack when hosting a tapas party.

A great crowd pleaser when you’re looking to entertain, these smoked bacon and cheese croquettes are a delicious dish. The combination of chives and smoked bacon ensure that they are bursting with flavour.

Ingredients

  • 6 rashers of smoked bacon
  • 2 cups cold mashed potato
  • 2 tbsp finely chopped chives
  • 1 egg yolk & 1 egg
  • salt and pepper to taste
  • 125g tasty cheese cubed
  • ⅓ cup rice flour
  • 1 cup gluten free breadcrumbs
  • olive oil for frying

Method

  1. Finely chop the bacon. In a non-stick pan on medium heat add the bacon and cook for 4 minutes or until crispy.
  2. In a large bowl combine mashed potato, bacon, chives, egg yolk and salt and pepper.
  3. Take a large spoonful of the mix and place it in your palm. Flatten the mixture and place a cube of cheese in the centre. Fold the mixture over and roll into a ball.
  4. Place the rice flour in a bowl, a whisked egg into another bowl and the breadcrumbs into a third bowl.
  5. To crumb each croquette, roll each ball into the rice flour followed by the egg mixture and finally into the breadcrumbs. Set aside until all are coated.
  6. In a large frypan add in enough oil to shallow fry. Heat to medium high heat and fry each croquette for 10 minutes, turning every so often to ensure even cooking.

These croquettes utilise chives to help bring some of that onion style flavour to the dish. Chives are a wonderful low FODMAP alternative to using onion which is high in fructans.
