Tamari Noodles

Quick, easy and delicious. These tamari noodles are the perfect go to lunch or light dinner. Vermicelli noodles are tossed with wombok, Chinese broccoli and tamari, then topped with a golden fried egg, fresh spring onion and sesame seeds. Naturally gluten free and low FODMAP, this is a simple recipe that delivers big flavour in minutes.

Ingredients

  • 240g vermicelli noodles
  • 4 large eggs
  • 2 cups of finely chopped wombok
  • 1 cup thinly sliced Chinese broccoli
  • 2 tbsp extra virgin olive oil
  • 3 tbsp tamari
  • green tips of spring onion to serve
  • 2 tbsp toasted sesame seeds

Method

  1. Prepare noodles according to packet directions. Once cooked, rinse with cold water and set aside to drain.
  2. Heat 1 tbsp olive oil in a large pan on medium heat. Add in wombok and Chinese broccoli, cooking for 5 minutes to wilt and colour the vegetables.
  3. While wombok and broccoli are cooking, in a medium sized pan, heat 1 tbsp olive oil on medium heat. Add in each egg and cook for 3 minutes, or to your liking. Set aside.
  4. Add the vermicelli noodles to the large pan and pour in tamari. Mix to combine the noodles and vegetables with the sauce.
  5. Serve immediately topped with egg, fresh spring onion and sesame seeds
